FiAMMA Trattoria and Bar blends the contemporary chic of its New York origin with the elegant simplicity of Chef Carlos Buscaglia’s Italian menu to create an experience that is both sophisticated and approachable. The restaurant’s sleek décor and rustic Italian cuisine work together to impart the warmth and comfort of its fiery namesake. Diners are encouraged to settle in to this contemporary Italian trattoria, one that promises to spark the imagination as well as the appetite.

Acclaimed restaurateur Stephen Hanson enlisted noted architect, Yabu Pushelberg, to translate the New York flavor of the original FiAMMA to its Las Vegas locale within the MGM Grand. The result is a setting as appealing to the eye as Executive Chef Buscaglia’s dishes are to the taste buds. Rich woods and brushed leathers in deep coppers and chocolate browns suggest the smoldering glow of the restaurant’s inspiration. The illuminated granite table tops, deep chairs, and flickering fireplace in the distinctive bar and lounge create an ambience of luxury for sampling from the Wine Spectator award-winning collection. The fiery theme continues in FiAMMA's split-level dining room, where amber lighting, sumptuous leather banquettes, and wood accents convey an atmosphere ripe for lingering.

Upon seating, we are treated to a flute of Prosecco, its crisp, dry fizz preparing our palates with a delightful sense of celebration. The arrival of the Arancine creates a similar stir. Four golden risotto balls line up in single file along the dish, resting in a bright red pomodoro sauce. Biting into the crunchy, fluffy cake reveals a hidden surprise: a Kobe beef stuffing that elevates this rustic Italian staple to sophisticated heights. Made from braised San Marzano tomatoes imported from Italy, the fruity pomodoro sauce adds freshness to the Arancine. Splashes of parmesan crema offer delicious dipping.

The Raviolini appear soon after: plump, flavorful nuggets of pasta and short rib stuffing bathed in a creamy, truffle-flecked sauce, zigzagged by a Barbera wine reduction. The short rib’s meatiness, the subtle sweetness of the red wine, the salty sharpness of the Pecorino cheese, and the truffle’s pungency build on one another to create a bold and pleasing dish. It is rich, hearty, and impossible to resist.

The Branzino departs from the heavier Raviolini with light, bright flavors. Grilled Mediterranean sea bass rests on a colorful panzanella, a traditional Italian bread salad, given a seasonal twist with the introduction of blood orange segments. Crunchy, herb bread croutons accentuate the crispness of the fish skin and contrast well with the buttery texture of the fillet. Although more subdued in richness than the Raviolini, the flavors of the Branzino are no less powerful. A traditional Salmoriglio sauce of garlic, lemon, and olive oil works with the tartness of the blood oranges for a zesty punch.

The Brasato returns the feast to the wintry coziness of the Raviolini, presenting a massive beef short rib braised in Sangiovese, according to Piemontese tradition. The meat is as tender as butter, flaking away to reveal a succulent pinkish center. A pool of creamy potato puree soaks up the short rib juices, while the accompanying roasted root vegetables add sweetness to deepen the flavors. The Brasato showcases Chef Buscaglia’s skill in introducing less familiar Italian culinary traditions with a unique flair that is simple, unpretentious, and deeply enjoyable.

For a sweet conclusion, we are treated to a selection from the dessert menu: the Espresso Chip Gelato and the valrhona chocolate mousse with amarena cherry reduction from the Duo platter. The molded, trapezoidal mousse is accompanied by a generous scoop of chocolate chip-flecked ice cream, enticing us to further indulgence. The deep decadence of the mousse is given a surprising twist by the tartness of the cherry reduction, while the gelato contributes a pleasant coffee-like bitterness for balance.

Whether relaxing fireside with a cocktail in the lounge, feasting with friends at casual round tables, or snuggling up with a loved one and dessert in an intimate booth, diners will have their hearts warmed and their appetites fueled by the memorable FiAMMA Trattoria and Bar.

Fantastico Fiamma  

Fabulous food at reasonable prices - one of the best restaurant meals ever!!

Rock this house!  

What an amazing evening. Coming from the RDU area of NC, we are quite fortunate to enjoy some of, if not the best, food on the east coast. We discovered FIAMMA in Vegas & had one of the best meals of our lives. The service was impeccable. The food came out seamlessly on time. I would suggest the tasting menu paired w/ the wine suggestions. Everything ROCKED & we cannot wait to return on our next trip to vegas. Do yourself & favor & check this place out PRONTO!

Hip Decor - Awesome Food  

We recently ate at FiAMMA for a birthday celebration and the food was fantastic. Two of us had lobster gnocci and wanted to lick the plate afterward. We sampled the two other diners food and all were delicious. The restaurant is a bit 'spendy' but since the food was so good, it still seemed like a good deal. I also liked that even though it was an upscale restaurant, the staff was really young and fun and friendly, not stuffy at all. Some of us were dressed up, others in more casual clothes and no one felt under or over dressed. I would definatly recommend this restaurant to friends.

Best Experience in Vegas  

My husband and I were celebrating our 1 year anniversary and choose Fiamma from some online information. It was wonderful!! The wait staff was attentive and knowledgeable, the sommelier was very creative and the food was superb. Can't say much more other then be sure to go there and try it out!!

An unexpected surprise  

We originally had dinner plans for another restaurant, but after reading over the menu we thought a nice pasta meal would better suit us. What we experienced was not your typical pasta dinner. The salads were sophisticated, the entrees were memorable (I am still reliving and tasting the meal a week later) and the desserts were incredible. I would recommend the braised short rib ravioli for anyone who wants the big flavor of meat, but not the heaviness of a steak meal. Our meal at FiAMMA was the best meal of our Las Vegas vacation.

wow. the place was amazing. from start to finish, the service to the food to the waiter. was a romantic and classy restaurant. dinner was priced fair in my opinion.

Loved Fiamma  

My husband and I had a wonderful experience at Fiamma. Our waiter, George, was so helpful and reoommended great dishes. The antipasto to share was perfect with our drinks and the gnocchi with lobster was just wonderful. The atmosphere was very upbeat and also elegant. I felt the food was good value for the money, especially given Vegas prices.

Great dinner on new years eve.  

I went to Fiamma on new years eve with my family to enjoy a great dinner and a great ambiance, and qe didn´t get disapointed. They gave us a great table for 7. The waiter was excelent, very kind and guided us on the wine cart, so we enjoyed a great one. The food was outstanding. all of us ordeder a diferent plate, and all of them were great.

Great Experience!  

The dark and romantic ambiance of the restaurant was very welcoming and the service was outstanding! An empty dish was never left on the table and our wine glasses were never left dry (we ordered a bottle). The food was absolutely phenomenal! My husband had the lobster and pasta entree that was to die for and I had the Raviolino which was like heaven in my mouth. I would definitely recommend this restaurant to anyone and everyone!

Nice experience, if pricey  

I liked my experience at FiAmma, but I agree that it is priced too high. I was intrigued by the Spaghetti and Meatballs because of the Kobe beef meatballs, and I was also a little reckless for ordering spaghetti that cost $28. I guess I wanted to see what was so great about it! I enjoyed the spaghetti, and I have to say the meatballs were the best I have had. Was it worth $28? Maybe $22... anyways, I liked the decor, the ambience, and we had a very good waiter. My mother-in-law thought her fish was too oily, but then again she is incredibly picky, and DOESN'T LIKE OLIVE OIL so why she ordered it without asking if it has oil is beyond me... My husband liked his scallops pasta a lot, and while the portions were not large, they were filling. We didn't order wine, and we still evened out to $50 per person. Hey, it was Valentine's Day, so why not throw down? We could have had a cheaper meal elsewhere, but would it have been as nice a place? Probably not. Would I go back? Even though I liked it, I think there are too many restaurants in Vegas to choose from, so I will probably venture elsewhere, but it was a nice experience on a special evening. =-)

Value and service make it a 4  

The food was very good and all seven of us were happy. The service was very good. The price was $55/pp including drinks, so very reasonable for the Las Vegas Strip. Nothing about the restaurant wowed us in order to give it a 5.

awesome food - bad waitress  

the ambiance is excellent, the food is amazing!! the portions are generous without compromising quality. However our only complaint was the waitress who sat us down and didnt reappear for 25 minutes to get our drinks!!! we had to finally flag down another waiter who served us. When our waitress came back she didnt even apologize she just said she got busy - in my mind that's not very good customer service. The other waiter we had was awesome, wish we had him from the very beginning

Would return for sure!  

Service, food, wine, entire experience was great. Went for my husband's 30th birthday and they provided us a champagne toast on the house. Would certainly return...food is outstanding!

Satisfied Customer  

Food was great, the decor is top notch. I would ask for a seat away from the main entrance however which is too close to the general traffic of the MGM. I would most certainly go back.

Great value  

FiAMMA offers a great dining experiences at a reasonable price. We found the food to be very good to excellent. Service was very good, not outstanding but, very good. We are looking to come back next time we are in town. Tip: ask for grated Parmesan cheese with the olive oil and Focaccia, it's outstanding!

Great food!!  

This was my second visit to Fiamma and frankly, I have had two of my favorite meals in the city there-and I have eaten out quite a bit in Vegas. The food is really outstanding here, and for the money, better than several other restaurants that seem to be more highly rated-and certainly more expensive. Our only complaint this time around was that we had a large party and the table at the front we got had an overhead light that shined directly into the eyes of one of the diners. They couldn't dim it and so we asked to be moved. That took a while and the hostess seemed annoyed that we had asked. I loved my short ribs and the folks that got the short rib ravioli were raving about it.

FiAMMA - MGM Grand Hotel  

This is a great business or personal dining location. The food value is great but the wine list pricing is exceptionally high, though they do offer some hard to find vintages. Service was wonderful and they respond quickly to special occasion requests.

Flawed FiAMMA  

We arrived about 15 minutes early for our reservation only to learn that it was not required and we had to wait in line behind parties who did not have resvs. They tried to give us a table not 5 feet from the entrance even though many tables were available in open sections. The food had good presentation but was overpriced for standard italian dishes and I thought it was bland. Our bill for dinner for 2 and 2 appetizers and 2 glasses of house wine was $178 for standard dishes of capellini and gnoccci. And it's quite a walk from the entrance of the MGM when you're wearing heels since I was told there was a dress code (the party in front of us were wearing flip flops). Won't be going back.

We went to Fiamma fo my Husband’s 40th Birthday. The food , the wine and the service was excellent. I made the booking on line one week prior to the date, and Mentioned it’s my husbands 40th , and got a confirmation from The restaurant that they will provide us with a nice table since we Are celebrating a special occasion. Just to make sure all is arranged The concierge at the hotel sent them an email reconfirming everything And even called them when we were on our way. Unfortunately when we Got to the restaurant the young lady at the front gave us a really Bad table and had no clue about anything. I had to ask her to change our Table and when it was time for desert I had to go to the waiter to tell him it is My husbands Birthday, but at that point it was so obvious and not a Surprise anymore!! Since I had put so much effort in to the reservation I was really disappointed. Otherwise the food was really good. I hope the management at Fiamma look in to this matter!!

A great find that needs a tiny bit of work.  

Our waiter really took away from our evening. Food was perfect and so was the restaurant.. but there was something to be said for how out of place our waiter left us feeling. Yes... we were just two basic girls from Alberta.. but his demeanor and almost outright rude tone and rushing from our table was not appropriate and almost made us feel like we were in the "wrong place". I understand the service industry. We were not expecting a babysitter... but at the very least when I selecte the wine pairing option with my dinner, he could have perhaps volunteered a bit of information about what I was being served. I tried to ask questions so that he could see that I was interested but after awhile I gave up as he clearly wanted us done and out of there. I would still come back...as it was a nice meal and the other staff were fabulous... but if we expereienced a repeat performance of this behavior I think it is likely I would lose my Canadian good manners and ask to speak to a manager. This boy needs to remember he is in some respects the face of the restaurant and if memory serves me correctly he is trying to work to earn a decent tip. Anyway, you asked so I thought I should tell you. Although the wine list was wonderful ...it would have been nice to see a few more lower costing wines on the wine list for full bottles.

Great Food, Expensive Wine  

Buried deep in the MGM FiAMMA offers reasonably priced entree's (for a 3 star Vegas restaurant) and an extensive wine list. The food, service and ambiance are very good. If you love wine and plan on drinking more than one bottle with dinner, I would suggest you do not go to FiAMMA's. Although there are great wines on the wine list, they are all way over priced. Wine that I have paid $20 for in other restaurants were listed between $55 and $70 in FiAMMA's!

Did not like my dining experience at FiAMMA. The food was average. The wait staff was not warm or inviting and our waiter was snotty. When it was asked if a substitution could be made, we were turned down and no suggestions were made. Not a great night.

good food, bad sound system choices  

The food and drinks were good, however the music in the restaurant was incredibly loud and clashed horribly with the music coming from the walkway onto which the entire restaurant is open. Like standing in two different bars at the same time. Recipe for a headache.

Don't waste your money!  

Great atmosphere, but unfriendly hostess and the food isn't wonderful for the price. Wine is in the $200 to $1000 range, so be prepared to spend a lot on a bottle of wine.

Long wait  

Even though we made a reservation at 7pm, we had to wait 20 min to be seater. And it wasn't until I went up to the hostess that they seated us. The food came out really quickly which was important because of the delay and the ambiance was very nice.

SO bad, we won't go back  

From the time we arrived, the experience was significantly less than what we expected. The sound system was too loud to carry on a conversation with the person directly across the table, the food took 90 minutes from the time we ordered it to be served to us & when it was served, some of it was not even hot. We complained several times to our waiter & the manager throughout the night but nothing ever got better. We have scratched this restaurant from our list & will not return.

The Service Lags  

The food was just average. I think the Chef thinks much too highly of himself. They were very unwilling to accommodate special cooking requests. The value here is horrible as the prices are not in line with the product, I'll pay high prices for great food and service. I'd suggest you keep looking for another Italian restaurant with better guest service, better value and nicer servers.

Disappointing experience  

Fiamma looked great and I was excited to have a chance to try it for an important business dinner. Unfortunately my food was terrible. Very disappointed with the experience.

overrated!  

I was expecting an amazing dining experience after reading all of the great reviews... however it was a huge disappointment. I have had better food at olive garden, and the service, at least from the server I was stuck with was very unpleasant. I do not reccomend dining here if you want good italian food.

Food was below average. Plenty of great restaurants in Vegas. Take my advice and don't pick this one.

disgusting and disappointing  

The service sucked...the food was gross and gave my fiance and I both food poisoning. The management was patronizing and unapologetic. It was the worst restaurant experience I have ever had in my entire life. 60 dollars a person is robbery at that place.

FOR THE LOVE OF GOD DON'T GO HERE!  

I ordered a $14 Caprese salad and got two slices of tomato, two slices of cucumber and a hunk of mozzarella that was no bigger than a golf ball. It was good, but for $14 I was expecting a bigger portion. Then I had a $28 Kobe beef spaghetti and meatballs. The tomato sauce was nothing special at all, it could've been Ragu for all I know, and the meatballs were about as flavorful as Kobe Bryant's testicles. They didn't taste anything like Kobe beef but rather like pork. My friend ordered some chicken dish and said it was dry. The service, by the way, was awful. It took like 50 minutes for our entrees to arrive, and our waiter never checked back with us. No, "How is everything?" or "Can I get you more bread?" Nothing like that at all. We literally didn't see him until it was time for the bill. The ONLY thing we liked about the restaurant was that we had a table at the very front, so we had a nice view to people-watch all the hot girls in short skirts walking past. Suggestions: 1. If you're gonna charge $14 for an appetizer, have bigger portions. 2. Don't false advertise on your menu. If you're gonna say the meatballs are Kobe beef, then use Kobe beef. 3. Hire some waiters who actually give a crap about the customers. If it's too busy for them to be attentive, then hire more waiters. We ate at several restaurants in Vegas, and this was by far the worst.
