Seablue belongs to Michael Mina's restaurant group, but maintains a unique identity thanks to Chef Stephen Hopcraft's adherence to Mina's vision. Ensconced on a prestigious restaurant row in the MGM Grand, the Mediterranean-influenced seafood restaurant has been drawing conventioneers and locals since 2003. The space is appropriately oceanic, with shimmering water walls and coral murals. Jet-fresh sea creatures are skewered, grilled over apricot wood, and served in Moroccan tagines. Even simply marinated, the clarity of flavor in the premium ingredients is evident. Befitting a Michael Mina restaurant, presentation is stellar. Desserts offer the same seasonal commitment and Mediterranean accents.
