We begin our Nove feast with a flute of Arneis and the Braised Oysters. Balancing on a bed of pepper, the delicate shells cradle the tender oyster meat mixed with one of two different concoctions: a sweet, zesty tomato basil mixture and a spicy, salty pepperoncini and lemon sauce. Each mixture highlights the oceanic pungency of the oysters, while subtly accentuating different flavor profiles. It is a refreshing and potent start to our meal.
The Hamachi and Foie Gras with Caponata deftly balances richness and delicacy. Generous chunks of yellowtail are sprinkled with decadent tidbits of foie gras and placed meticulously next to vibrant streaks of caponata puree. The potent foie gras and the sweet caponata infuse the creamy fish with decadent depths of flavor. A hint of citrus tartness adds even more complexity to this unique dish.
The Crudo presents a delightfully nuanced twist on this traditional Italian dish. A variety of different raw fish are presented on the plate, their distinctive flavors juxtaposing simply against one another. On the left, a thick slice of tuna is treated to a topping of citrusy tapenade: the briny acidity activates the creamy, cool fish and deepens its flavors. Next, a hamachi slice is presented with a simple sprinkling of greens, allowing the meaty fish to stand out on its own. A white tuna is given a traditional crudo application of citrus and salt, which punctuates its mildness. The salmon, too, is treated similarly: its acidic tartness swirls around the fish's buttery creaminess and accentuates its richness. To conclude, our palate returns to the tuna, this time marinaded in a fennel vinaigrette, its crunchy anise notes tinged with a hint of spice that enlivens the fish and our taste buds in preparation for our next course.
The Scallops with Truffles exhibit an architectural minimalism that belies their hidden flavorful treasure troves. A fried quail egg rests on top of the plump scallop next to a vibrant smear of madeira reduction. The deconstruction of this edible tower reveals its subtle artistry: sandwiched between the delicate halves of the scallop is a bounty of fragrant truffle slices. It is a surprising and unexpectedly complementary pairing, with the scallop's light sweetness infused with the resonant earthiness of the truffles and enriched by the egg. The Hexemer 2006 Riesling’s honeysuckle and candy notes contribute a full-bodied sweetness that supports the heartier flavors of the dish without overpowering its lightness.
The Federal Hill Calamari is served next and brings with it a more casual, relaxed feel. Named for the iconic Italian neighborhood in Providence, Rhode Island, the calamari is infused with the potent flavors of this regional cuisine. Each delicate tendril is lightly fried and dusted with parmesan and pepperoncinis for a distinctive take on this familiar appetizer, blending a quintessential Italian flavor profile with a novel application. Crunchy and soft, buttery and spicy, it proves to be an irresistible snack.
The Burrata brings a welcome freshness to the table. The smoky sweetness of blistered tomatoes mingles with the creamy mozzarella for a new twist on the classic pairing, while a richly pungent pesto of garlic, parsley, basil, and olive oil infuses the mild flavors of the cheese with an herby robustness. A crisp, herbed cracker adds crunch and an unexpected spiciness for additional complexity.
Although the title of our next dish, the Bacon and Eggs, sounds both innocuous and out-of-place in our Italian feast, it confounds all expectations when it arrives to the table. A large raviolo is sprinkled with crisp pancetta nestles in the bottom of a deep bowl. When cut into, the golden yolk of an over-easy egg spills out, coating the raviolo pasta and submerging the pancetta bits in its sticky delectability. Inside, a cushion of ricotta soaks up the rest of the egg and enhances the richness of the dish. Creamy and cured, rich and light, this dish is a revelation, a unanimous favorite, and reason alone for returning to Nove.
Typical of NOVE Italiano’s style, the Veal Nove takes a traditional dish and alters it subtly with novel flavors. A traditional scallopini is presented on the plate: pounded thin, the golden breaded veal cutlet sends up a citrus and herbed aroma into the air. The “Nove” touch to this familiar dish can be seen in the use of prosciutto and arugula that accompanies the veal and deepens the flavors and enhances its meatiness with cured and slightly bitter accents.
Nove’s signature Death by Potatoes is brought as a tasty accessory to the dish: mashed with olive oil, sprinkled with pancetta, baked, and then topped with mascarpone sour cream, these potatoes are certainly not your typical side dish. Impossibly decadent, with a complex layering of flavors and textures, they elevate this simple comfort food to new heights of culinary refinement.
For our sweet finale to our meal, we are served yet another uniquely Nove twist on a traditional Italian dish. The Strawberry Carpaccio transforms the typical savory carpaccio with the introduction of the strawberries’ sweetness and the creamy crème fraiche gelato, while the drizzling of balsamic vinegar over the thin berry slices and a generous dusting of panko breadcrumbs contribute a savory component to the dish and transform all confectionary expectations. The truly inspired addition to this dessert, however, is its expert pairing with its accompanied Vin Santo, a traditional Italian dessert wine, which is produced from the liquid of dried and fermented grapes for a uniquely balanced and full-bodied sweetness. Each sip of the Vin Santo intensifies the flavors of the carpaccio, echoing the berries’ tartness in the back of the palate with exceptional clarity.
As we leave our feast behind and head toward the exit, we are invited to enjoy Moon, the Palm’s chic nightclub that is openly accessible to all Nove diners as part of their dining experience. Unfortunately, too weighed down by our culinary overindulgence, we have to graciously decline and save this added adventure for next time. From beginning to end, a visit to NOVE Italiano is a treat for the senses, and one that reminds diners that dinner should be more than just a means of satisfying basic hunger. Nove is chic, hip, and worth the wait on a busy night. The food is excellent (I love Sunday Gravy, which is a pasta dish with tomato sauce, lamb, italian sausage, and proscuito). The view of the city is terrific also up there. Wear a collared shirt...no flip flops and shorts and all that crap thank God.

When you complete your dining you can move directly into the Playboy Club for some gambling amongnst the finest (literally) of dealers. Afterwards you can retreat to the Moon Night Club to dance and gain a spectaculat view of the Las Vegas strip. Overall simply one of the best in LV.

Beautiful view. Attentive service. Magnificent meal! Something as simple as a caprese salad was sublime. Sommelier most gracious and helpful. Even the manager came over to ask about our meal, service, etc. Wondeful main courses and deserts. A memorable dining experience.
I returned to Nove for a second time in less than three weeks with my wife in tow....and we loved it! Great food, supreme service, in a sexy setting high above the streets of Las Vegas. We'll be back again...and again....
A superb time was had by all, primarily due to the attention of Joe Molinaro, our waiter, who was quick to suggest appetizers that our sizable group (8 people) could enjoy prior to selecting our entrees. The service made the experience a great one, but it helps that the food was enjoyed by all (well prepared, well presented). Truly an excellent experience I would recommend to anyone!
Went on Valentines Day, one of the best meals I've ever had. Be prepared to eat alot! Wait staff is fabulous!
Being that my fiance and I are not from the Las Vegas area, we went into picking a restaurant for our Valentines Dinner a little blind. Unknown to my fiance (then girlfriend) was that I was going to be proposing that night. After reading a ton of reviews, I decided on Nove Italiano and made the reservation. I listed that I would be proposing on the reservation.
Once we got to the restaurant that night, I could tell immediately I made the right choice. My fiance was presented a rose at the door and we were taken to our seats (ten minutes before our reservation time) which were located off of the main floor giving us an extra degree of privacy and also an exceptional view of the strip and surrounding Vegas area.
Our waiter for the night was Tony Brewer and he was in a word EXCEPTIONAL. He took care of us in every way possible, including video taping the proposal at my request and bringing out multiple complimentary items including champagne to celebrate our engagement. Additionally, at the end of the night he paid out of his own pocket to get us a customized dessert that also congratulated us on our special moment.
Before the end of the night he also spoke with his manager Servando Daniels who was also extremely friendly and helpful. At that time, they comp'd us admission to the Playboy club and further enriched our already amazing experience. If you are looking for a great restaurant with outstanding food, atmosphere, views, and wait staff eat at Nove. From the time you exit the elevator and enter Nove you feel the laid back atmosphere. The food is outstanding we had the Anti-Pasti platter and it was excellent. I am from Florida and had the Ahi Tuna and it was possibly the best Tuna I have ever had. I highly recommend this restaurant for anyone looking for a great meal not located on a noisy casino floor.
This restaurant has an amazing view. The bar is also perfect size. The dining atmosphere is wonderful. The manager came by our table and also offered to give us passes to go up to the Ghost Bar after (a must). The food is excellant. The prices are a bit high but for the entire experience, its worth it!

We had a great dinner @ Nove last week. Requested a booth and it was waiting for us even though only 2 in our party. The cannoli desert was unique and delicious. Meal was expensive but if you're pinching pennies in Vegas, stay home. We'll be back.
Nove Italiano was fantastic! We had a group of 6 and from App's to dessert, everything was great! The Veal Chop and Risotto were two of the best dishes. The only concern, and it is a small one, was the lever of the music during dinner. It was a bit loud and hard to carry a dinner conversation. I most definetly will go back. It is one of the very best that Las Vegas has to offer.
I have eaten at most of the better steak houses and the filet I had at Nove Itailiano was one of the best steaks I have ever had. Everyone of my guests had a simlar experience with their selections. The visit was as graet as the view!
Everything was exellent! We were on our honeymoon and the chef prepared a special dessert just for us! We will definitely be going back on our next trip to Vegas.
What a wonderful Restaurant! Beatiful Decor, Wonderful attentive wait staff, absolutely top notch...And the food, SO GOOD! We couldn't have asked for more, we will definitely be visiting again next time we're in Vegas
If you are looking for great Italian food, go no further. My wife had ricotoni with meat sauce. I tasted it and it was the best I have ever had. I had Ahi Tunu and asked for it done medium. Again, the best I have ever had. I had the cheesecake for dessert with a huckleberry sauce to the side, again, the very best cheesecake I have ever had. Also, the waiter was fantastic and all the other "bus boys" kept our classes full. I can see why this restaurant is in the top 10 rated restaurants in Las Vegas. We will return.

I took my wife here for our anniversary and it did not disappoint. The food was excellent, drinks were wonderful, and the staff was pleasant. Will definitely be back on our next trip to Vegas!
I had my bachelorette party dinner there with 10 girlfriends! We LOVED it! The atmosphere was FUN! Great place for us girls to drink cocktails, laugh it up and east AMAZING food! The service was AMAZING! I had the filet and Death by potatoes! The potatoes were RIDICULOUSLY AMAZING!!! I can't say enough positive comments. I was 110% satisfied all around. I can't wait to go back!

We wanted to try something new. The menu has so many options that offer you the chance to try something as traditional as a good steak, but then you can add is some italian infusion. We loved the shrimp appetizer, their rissoto was the BEST.
We sat down for dinner on Saturday night at 7 p.m., and we all ordered the fixed price dinner. The waiter informed us it was no longer available on Saturday night. After we protested, he checked and returned saying the chef would make the fixed price dinner for us. It's a great bargain and available until 7:30 on Saturday nights, but you might want to confirm this in advance! The food, wine and ambiance are excellent.
some people don't mind poking around their entree to retrieve food. that is not our style. we like user-friendly fare, but the sea bass required more of my husband that he thought fair given the price.

I enjoyed my experience at Nove Italiano. The food and service were excellent. I really enjoyed the complimentary dishes supplied by the chef. I felt the dishes were priced appropriately. The only thing I didn't enjoy is the amount of noise in the restaurant. It was very busy and there were a lot of people moving around which was distracting.
What a pleasure. Nove Italiano has everything from a great view to magnificant food and I consider it a real value for your money. It will not be the last time we dine there when we are in Las vegas

The atmosphere is spectacular and the services amazing. However, the price can be over the top and highly unreasonable.
It was very nice.. the food was above average and the service great! Our server was very helpful with choosing a wine to go with our meal. WE would recommend this restaurant to anyone ! Although everything was separate.. We shared and if you are wanting a potatoe go for the death by potatoe. It was fabulous.. go and see for yourself you won't be disappointed..

Service was great. Food was good. Beautiful restaurant. Beautiful view. Has a big nightclub vibe to it (not my thing). Music was verry loud and club like, whichtook away from an otherwise great dining experience.
I've eaten at quality restaurants ranging from 5 star to hole-in-the-walls and value good service and great tasting food. While Nove Italiano was "fine", it felt like the restaurant was trying really hard to look and be cool, but was frenetic in its attempt. It was not worth the cab ride from the Strip to the Palms.
Just not up to high standards and food to non traditional in content, flavor and presentation. Want ot be good restaurant just not there yet.
I don't understand why they would block such an incredible view with high back booths and fire stones. It was much too warm sitting next to the fire. The music in the resturant was loud enough to be in a night club not a restaurant, turn it down so people can have a converstion without yelling. If it's an acoustical problem don't drown out the background noise with the music, fix the problem! The service was good and the food above average
Nove was a good restaurant...good ambiance....I'm glad I went and enjoyed it but don't know that I would make it a point to go back
1. Atmosphere is outstanding and the waiters in the restaurant area were friendly. 2. Waiter in the bar area was very "cold" - she could have been friendlier. 3. Food for the price was average.

I have visited Nove several times in the past. I was disappointed to have no veal chops on the menu which seems like i have had there before in the past. The veal i had was pretty good with a nice lemon sauce. The Caesar salad was delivered before the appetizers and the service was slow and a little un-caring.. They brought what we asked for, but we always had to ask..very seldom were new drinks or waters filled by attentive servers..OK..May go back again as i have had very good meals and service in the past, but with so many choices in Vegas, i found this one a little weak..
Need a cook who can cook a steak.
Beware of Nove restaurant as it displays lucrative specials that are not honest to the customer. Their website boasts Ladies nite every Tuesday nite, but fails to tell you till after the bill comes that the whole party must be ladies. Fail! The website also promotes a prefix meal, that was not offered by the waiter (we had to ask) but the entire party had to order it for one person to enjoy it. Fail! There was no part of the staff that tried to fix their misinformation. But, if all you care about is paying extremely high prices for truly average food with great views and ambiance, then Nove is for you.
I wouldn't go to this in the future. Once was enough.
Dont waste your time or money.Top ten ....might as well go home and make some Pasta Roni. Don't get screwed in Vegas by a Name. I live here and this place has nothing but a o.k. view. There is no reason for this to be anywhere close to the top 10.My entire order arrived at the table before I returned from the restroom....How is that possible you might ask... I don't know but within 5 min. of me ordering. ceaser salad, calamari, Mushroom Ravioli, Marg. pizza Before I returned from the restroom Everything was on the table.How do you make 5 star food in 2 min.??
