My wife and I had our best dinner in Vegas at Yellowtail.The Tuna pizza (not really a pizza) was delicate and flavorful. The crab springroll was sharp in flavor and texture as was the spicy tune spring roll. Don't miss the grilled eggplant! Even if you don't think you like eggplant, this is superb. The wait staff was helpful and informative at every aspect of the meal, including suggestions. Don't over order! The food is very much a tapa style so take your time and enjoy two dishes at a time. The view of the fountains doesn't hurt either. Great evening!
