Binion's Ranch Steakhouse
Address: 128 Fremont Street, Las Vegas, NV 89101
In a city like Las Vegas, there are very few absolutes. Always split aces and eights. Never bet more than you can afford to lose. Never wise-off to the bouncer. For people seeking the "Old Vegas," there is one more absolute: eat at least one over-the-top dinner at Binion's Ranch Steak House. Binion's is a throwback to the Rat Pack era. The decor is burgundy velvet, of course. The view from the 24th floor is fabulous. The portions aren't just large, they're gigantic: a statement in excess. The prime rib alone is the size of a Caddy's tailfin. With service that personifies Western Hospitality, and a loyal staff that has been around for decades, Binion's is a sure thing.

Emeril's New Orleans Fish House
Address: 3799 Las Vegas Blvd. S., Las Vegas, NV 89109
Emeril. He’s an institution, as much as a recognizable household name. He’s made cooking fun and easy for everyone, and has restaurants in New Orleans, Las Vegas, Orlando and Miami, Atlanta, as well as Gulfport. He owns the trademark Emeril’s, as well as famed Delmonico’s Restaurants. Las Vegas’ Emeril’s New Orleans Fish House, ensconced in the MGM, has made its home here since 1995, though undergoing a major remodel two years ago. The restaurant is sexy, and the food is exciting. Their wine list is more than fifty pages, and their service staff makes each diner feel like there’s a team of servers that exist just to cater to their needs.

Corsa Cucina
Address: 3131 Las Vegas Blvd. S., Las Vegas, NV 89109
Corsa Cucina is in the 'sweet spot.' It's perfectly situated for those leaving theaters at the Wynn, wanting something Italian, in an elegant locale. Their assortment of appetizers, pizzettes, pastas, and entrees are unique, and their Corsa salad is as lovely as it is delicious. They sport a full bar, as well as an impressive wine list, and while the restaurant can get quite busy, their service is efficient. It's an ideal 'after theater' late dinner spot, and the right table can be quite romantic, particularly when sharing one of their sexy, decadent desserts.
